Indian Brussel Sprouts

Easily spice up your weeknight vegetables with some BIG indian flavor. Roasted brussel sprouts and onions are one of my favorite go-to vegetable sides. Why not break up the flavor monotony of your week by having fun with your spices? This recipe adds a spicy indian twist to a simple and satisfying side dish. So simple, you can use this spice mixture on virtually any dish!

Spices
1 tsp salt
1/2 tsp pepper
1 tbs minced garlic
1 tsp garlic powder
1 tsp curry powder
1/2 tsp cayenne pepper
2 tsp chili powder
1/4 tsp sumac
2/3 cup olive oil
2 medium onions large dice
2 cups brussel sprouts halved

Directions
preheat your oven to 375 degress
cut off the stems of the brussel sprouts
cut sprouts in half length-wise
dice 2 medium onions into large sized pieces
add vegetables to a sheet pan and spread out evenly
add olive oil and seasonings
toss to combine
Place sheet pan on the bottom rack of your oven and bake for 40-50 mins at 375 degrees. I like mine extra caramelized so I tend to keep them in a little longer. Once they are dark and golden brown you know they are ready. If you want to add a little extra sweetness, I sometimes drizzle a sweet soy glaze overtop of the veggies (while they are still hot from the oven) and toss. Thank me later.
