Ginger Beer Battered Onion Rings

This tempura batter is extra simple and creates an extra crunchy onion ring. They are good on their own and even better stacked on top of pretty much anything....

especially this hamburger.
This batter is a wet tempura batter so it needs carbonation and it needs to be ice cold. For the carbonation I am using a can of ginger beer I found in my cabinets. (I put it in the freezer for 10 minutes to make sure it was cold when I used it.) The non-alcoholic drink will have the amount of fizz needed to make this batter light and crispy. Keeping the mixture ice cold by sitting the mixing bowl over ice, as well as incorporating cold liquid, will ensure the gluten in the flour develops at a slower rate, giving you a crispier batter.

Slice a medium sized onion into rings.

The batter is so SIMPLE!
Dry ingredients include:
1 cup of flour
1/4 tsp. salt
1/4 tsp. chili powder
pinch paprika
pinch yellow curry powder
(other spices optional)

Whisk in
1 cup ginger beer
(ginger beer optional)
you can also use other carbonated drinks like beer, club soda or tonic water
BE CAREFUL NOT TO OVER MIX THE BATTER!
Toss in rings and get ready to shallow fry in pre-heated oil.

Drag the rings around before setting them straight into the oil so they don't stick to the bottom.
Continue to add more and making sure they aren't sticking.
Flip and let cook on other side, making sure to move them around. When they look golden brown place them on a paper towel or baking rack to cool off without getting soggy.
Salt while still hot and exiting the fryer. Let them cool long enough so you don't burn your mouth.
